Bruschetta for Easy Summer Entertaining.

Summer entertaining asks for food that feels generous without keeping anyone tied to the stove. A platter of bruschetta does exactly that. It is fresh, colorful, easy to scale, and happiest when served at room temperature with cold drinks and a loose gathering of friends.


This version brings together sun kissed tomatoes, creamy Swiss cheese, crisp toasted bread, and a glossy drizzle of extra-virgin olive oil. The tomatoes do the bright, juicy work. The cheese adds a mellow richness. The bread gives crunch. A little garlic, basil, and flaky salt pull it all into one of those simple seasonal bites that tastes like more effort than it takes.


Bruschetta also suits summer because it celebrates produce at its peak. When tomatoes are ripe, they need very little help. Choose the best ones you can find, give them time with salt and olive oil, and let the bread carry the rest.


Ingredients:


  • 4 thick slices of rustic sourdough or country bread

  • 2–3 ripe tomatoes, diced

  • 120 g (4 oz) creamy Swiss cheese (such as a mild Swiss or creamy Emmental), sliced or torn

  • 2 tbsp extra virgin olive oil, plus more for finishing

  • 1 small garlic clove, peeled

  • A handful of fresh basil leaves

  • Sea salt

  • Freshly ground black pepper

  • Optional: a few drops of balsamic glaze


Preparation method:


  1. Toast the bread until golden and crisp. While still warm, rub one side of each slice with the garlic clove.

  2. In a bowl, gently combine the diced tomatoes with 2 tablespoons of extra virgin olive oil, a pinch of sea salt, black pepper, and a few torn basil leaves. Let stand for 5 minutes to allow the flavors to mingle.

  3. Arrange slices of creamy Swiss cheese over the warm toast.

  4. Spoon the tomato mixture generously on top, allowing some of the juices to soak into the bread.

  5. Finish with another drizzle of extra virgin olive oil, a few fresh basil leaves, cracked black pepper, and, if desired, a light drizzle of balsamic glaze.
